Ginger Nut Biscuits

Christmas smells and a tangy crunch. What more could you ask for in a biccie?

Makes 16 biscuits

You will need:
4oz self raising flour
1 slightly rounded teaspoon of ground ginger
1 very small teaspoon of baking soda
1 and a half oz of sugar
2oz of margarine (make sure it's cold)
2 and a bit tablespoons of golden syrup
You'll also need 1 large baking sheet, greased.

1. Preheat the oven to 190 degrees C/ 375 F (Or gas mark 5)
2. Sift the flour, ginger, baking soda in a mixing bowl. Then add the sugar and lightly rub in the marg until the mixtureis looks like breadcrumbs.
3. Then add the syrup and mix to a paste. This is very messy, so do it with a spoon first, and then with your hands.
4. Now divide the mixture into 16 little balls and space them evenly on the baking tray, as they spread out.
5. Push the balls down with a spoon very slightly so that they are higher at the sides than the middle.
6. Put in the oven for 10 minutes. DO NOT OPEN THE OVEN UNTIL THE TIME IS UP!
7. Take out of the oven and cool on the baking tray for 10 minutes. They will be soft at first, but don't worry, they harden. Then take them off the tray and cool on a plate or wire rack until completely cold.
8. Then stuff your face!
